Ovada Chinato

Ovada Chinato is an aromatized wine produced with Ovada, the red D.o.c.g. ( Controlled and Guaranteed Designation of Origin ) wine obtained from Dolcetto grapes grown and vinified in 22 municipalities of Monferrato in Piedmont in that area, bordering Liguria, which has as its epicenter in the small town of Ovada.
This naturally aromatized wine, created for the first time by the Gualco Distillery in 2023, is enriched with cinchona calissaja and red cinchona bark, coriander, vanilla pods from Madagascar and numerous other spices whose active ingredients are extracted with a slow maceration at room temperature at the end of which, always at room temperature, an extraction is carried out with the Naviglio principle, the 100% Italian technology that allows the aromas and active ingredients of the plants to be enhanced.
Compared to other chinato wines on the market, the sugar content is almost halved, the original base of the Dolcetto wine gives very pleasant notes of cherry and liquorice and on an organoleptic level the china is enhanced by notes of nutmeg.
This meditation wine is an elegant end to a meal to be served at room temperature,or with ice in a cocktail or even warmed up with a lemon peel.
Ovada Chinato is also an "ideal liquid" to support and complete the persistent taste of chocolates rich in cocoa and amaretto biscuits from the Ovada and Gavi areas.

Colour: ruby red tending towards garnet
Nose: Elegant, notes of cherry, almond and liquorice typical of the vine and spices such as nutmeg and cinnamon emerge first on the nose.
Taste: warm, intense, bitter and sweet but with a dry finish. In the aftertaste, the scent of Chinchona Calissaja and some more suffused notes of Cloves and Vanilla emerge clearly.
